Where: The Avenues Mall

      Caring Chefs is certainly the premier food event of the year here in Jacksonville. All proceeds go to the Children’s Home Society, so ticket holders can have both the satisfaction of helping those less fortunate and of being able to sample food from some of the First Coast’s finest restaurants. For the next few weeks we’ll be profiling some of the chefs involved. This week, we’re profiling Mike Barbour of Zaitoon.

EU: Why do you participate in Caring Chefs? How many years have you done the event?
Barbour: This will be Zaitoon’s first time participating in Caring Chefs since opening in late March. Zaitoon is proud to be actively involved in our community and we are pleased to support the Children’s Home Society of Florida.


EU: What are the three ingredients you can’t live without?
Barbour: Frank’s Red Hot, soy sauce, and pork products.


EU: Appetizer entree or dessert? Why?
Barbour: Appetizer - I love the idea of tapas or sampling several small plates.


EU: What’s the strangest dish you’ve ever prepared?
Barbour: Vegetarian Lasagna Sorbet


EU: What’s your favorite dish to eat? Prepare?
Barbour: My favorite dish to eat is real New York pepperoni pizza. My favorite dish to prepare is one perfectly seared scallop paired with whatever looks fun that day.


EU: Can you let us in on what you’ll be serving at the event?
Barbour: Traditional Middle Eastern dishes and Mediterranean food with a flair.
